Bananas are affordable and plentiful again and I’ve now had my fill so I’m likely to have a couple of them start to turn, the perfect time for them to be turned into muffins or cakes. This recipe is adapted from one I found on Recipe Source. It is enough to make 12 muffins and neatly doubles if required
