Food blog – Banana Choc Chip Muffins

Bananas are affordable and plentiful again and I’ve now had my fill so I’m likely to have a couple of them start to turn, the perfect time for them to be turned into muffins or cakes.  This recipe is adapted from one I found on Recipe Source.  It is enough to make 12 muffins and neatly doubles if required

Utensils:

  • Two large bowls
  • Wooden spoon
  • Electric mixer
  • Muffin Tray/s
  • Muffin cups (paper or silicon)
  • Oven (kinda important)

FIRST THING TO DO ONCE YOU’VE DISCOVERED YOU HAVE ALL THE INGREDIENTS

  • preheat the oven to 180C (350F) I forget this step ALL THE TIME (If you have a fan forced oven, drop the temperature by between 10 – 20 degrees)

Ingredients:

  • 2 extra-ripe bananas
  • 2 eggs
  • 1 cup of brown sugar
  • 1/4 cup butter (melted)
  • 1 tsp vanilla essence
  • 2 1/4 cups of plain flour
  • 2 tsp baking powder
  • 1 tbsp of cinnamon (more or less according to your taste – I LOVE cinnamon so tend to put more in)
  • 1/2 tsp salt
  • 1 cup of chocolate chips (milk or dark according to taste)

Method:

Mash the bananas!

Then in the smaller of your two large bowls, beat mashed bananas, eggs, sugar, melted butter and vanilla until well blended.

In a large bowl combine flour, baking powder, cinnamon and salt.

Unmixed dry ingredients

Stir in chocolate chips.

Make a well in the centre of the dry ingredients and pour int he banana mixture.  Mix until just blended.

Spoon into muffin cups.

Bake for between 25 – 30 mins. Let cool, enjoy!
